- 250 gpotato starch
- 1 tspsalt
- 0.5 tspnutmeg(freshly grated)
- 1 pinchwhite pepper(to taste)

Instructions
Wash the potatoes thoroughly and boil them in their skins until tender (about 25-30 minutes, depending on size).
Drain the potatoes, let them cool slightly, then peel them while still warm. Press them through a potato ricer or mash them very finely with a fork. Let the mashed potatoes cool completely.
Once the mashed potatoes are cold, add the potato starch, salt, nutmeg, pepper, and egg. Knead everything thoroughly until a smooth, pliable dough forms. If the dough is too sticky, add a little more potato starch; if it's too dry, add a tiny bit of water.
Bring a large pot of salted water to a gentle simmer (the water should not boil vigorously, just gently bubble). Form the potato dough into uniform dumplings, about the size of a golf ball or slightly larger, with wet hands.
Carefully place the dumplings into the simmering water. Do not overcrowd the pot; cook them in batches if necessary. Let them simmer for about 15-20 minutes. The dumplings are done when they float to the surface and have expanded slightly.
Remove the cooked dumplings with a slotted spoon and drain them well. Arrange them on a serving platter and drizzle with melted butter before serving.
