- 1 kgPotatoes(waxy or all-purpose)
- 2 tbspVegetable oil
- 50 gSmoked bacon(diced)
- 1 mediumOnion(finely chopped)
- 1 tspSalt(to taste)
- 0.5 tspBlack pepper(freshly ground, to taste)
- 1 tbspFresh parsley(chopped, for garnish)
Instructions
Wash the potatoes thoroughly. You can either peel them or leave the skin on for extra crispiness. Cut the potatoes into uniform slices, about 0.2 inches (0.5 cm) thick.
Heat the vegetable oil in a large, heavy-bottomed skillet or cast-iron pan over medium-high heat. Add the potato slices in a single layer if possible. You may need to cook them in batches to avoid overcrowding the pan.
Fry the potatoes for about 10-15 minutes, stirring occasionally, until they are golden brown and crispy on all sides. Reduce the heat to medium if they are browning too quickly.
Once the potatoes are almost done, add the diced bacon to the pan. Cook for another 5-7 minutes, stirring, until the bacon is crispy and the fat has rendered.
Add the finely chopped onion to the pan with the potatoes and bacon. Cook for another 3-5 minutes, stirring frequently, until the onion is softened and translucent.
Season generously with salt and freshly ground black pepper to taste. Toss everything together to ensure an even distribution of seasoning. Taste and adjust if necessary.
Serve immediately, garnished with fresh chopped parsley. These fried potatoes are excellent as a side dish or as a simple main course with a fried egg.
