- 200 gfresh wild garlic
- 1 tbspolive oil
- 1 mediumonion(finely chopped)
- 1 clovegarlic(minced)
- 750 mlvegetable broth
- 100 mlheavy cream
- 1 tsplemon zest
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
- 30 gpine nuts(for garnish)
Instructions
Wash the wild garlic thoroughly and pat dry. Roughly chop the wild garlic leaves.
Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
Pour in the vegetable broth and bring to a simmer. Add the chopped wild garlic and cook for about 5 minutes, or until the wild garlic is tender and bright green.
Stir in the heavy cream and lemon zest. Season with salt and freshly ground black pepper to taste. Heat gently for a few more minutes, but do not boil.
While the soup is heating, toast the pine nuts in a dry skillet over medium heat for 2-3 minutes, or until golden brown and fragrant. Watch them carefully as they can burn quickly.
Ladle the creamy wild garlic soup into bowls. Garnish each serving with toasted pine nuts and an extra sprinkle of lemon zest, if desired. Serve immediately.
