Instructions
Wash the cucumber thoroughly. Grate it using a box grater or food processor. Place the grated cucumber in a fine-mesh sieve or colander.
Add a generous pinch of salt to the grated cucumber and let it sit for about 10-15 minutes. This draws out excess moisture. After resting, firmly squeeze out as much liquid as possible from the cucumber using your hands or a clean kitchen towel. This step is crucial for a thick, non-watery tzatziki.
In a medium mixing bowl, combine the strained Greek yogurt, minced garlic, chopped fresh dill, olive oil, fresh lemon juice, and white wine vinegar.
Add the thoroughly squeezed grated cucumber to the yogurt mixture. Stir everything together until well combined.
Season the tzatziki with salt and freshly ground black pepper to your taste. Remember the cucumber was salted, so add cautiously.
