- 4 cupschicken broth
- 1 cupmilk(whole milk recommended)
- 0.5 cupheavy cream
- 250 gcheddar cheese(shredded)
- 125 gcream cheese(softened)
- 2 tbspall-purpose flour
- 1 tspDijon mustard
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
- pinchnutmeg(freshly grated, optional)
- 2 tbspfresh chives(chopped, for garnish)
Instructions
In a large pot or Dutch oven, melt the butter over medium heat. Add the finely chopped onion and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Sprinkle the flour over the onion and garlic mixture. Cook for 1-2 minutes, stirring constantly, to create a roux. This will help thicken the soup.
Gradually whisk in the chicken broth, making sure to scrape up any bits from the bottom of the pot. Bring the mixture to a gentle simmer, then reduce the heat to low.
Add the milk, heavy cream, and Dijon mustard to the pot. Stir well to combine. Let it heat through for a few minutes, but do not bring to a boil.
Add the shredded cheddar cheese and softened cream cheese to the pot. Stir continuously until both cheeses are completely melted and the soup is smooth and creamy. This may take about 5-10 minutes.
Season the soup with salt, black pepper, and a pinch of nutmeg, if desired. Taste and adjust seasonings as needed. If the soup is too thick, you can add a little more broth or milk to reach your desired consistency.
