Instructions
Cook the tortellini according to package directions in a large pot of salted boiling water until al dente. Drain well, reserving about 1/4 cup of the pasta water.
While the tortellini are cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and diced ham to the skillet. Cook for another 2-3 minutes, stirring occasionally, until the ham is lightly browned.
Pour in the heavy cream and milk. Bring the sauce to a gentle simmer, then reduce the heat to low. Stir in most of the grated Parmesan cheese, reserving a little for garnish.
Season the sauce with salt and freshly ground black pepper to taste. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
Add the drained tortellini to the skillet with the sauce. Toss gently to ensure all the tortellini are well coated.
Serve immediately, garnished with the remaining Parmesan cheese and fresh chopped parsley.
