Instructions
Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
While the spaghetti cooks, heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened and translucent.
Add the minced garlic to the skillet and cook for another minute until fragrant. Be careful not to burn the garlic.
Pour in the crushed tomatoes. Stir in the dried oregano, dried basil, sugar, and red pepper flakes (if using). Season with salt and freshly ground black pepper to taste.
Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook for at least 15-20 minutes, stirring occasionally, to allow the flavors to meld. If the sauce becomes too thick, add a splash of the reserved pasta water.
Once the spaghetti is cooked and drained, add it directly to the tomato sauce in the skillet. Toss gently to coat the spaghetti evenly with the sauce.
Serve immediately, garnished with fresh chopped parsley and a generous sprinkle of grated Parmesan cheese.
