- 4 piecesPork cutlets (about 5 oz each), pounded thin
- 4 slicesCooked ham
- 4 slicesSwiss cheese (or Gruyère)
- 0.5 tspSalt(to taste)
- 0.25 tspBlack pepper(to taste)
- 0.5 cupAll-purpose flour
- 2 largeEggs(beaten)
- 1 cupBreadcrumbs(Panko preferred for extra crispiness)
- 0.5 cupVegetable oil(for frying)
Instructions
Place each pork cutlet between two sheets of plastic wrap and pound them thin to about 1/4 inch thickness using a meat mallet or rolling pin. Season both sides of the pounded cutlets with salt and pepper.
Lay a slice of ham and a slice of cheese on one half of each pork cutlet. Fold the other half of the cutlet over the filling, pressing the edges firmly to seal. You can use toothpicks to secure the edges if needed.
Prepare three shallow dishes: one with flour, one with the beaten eggs, and one with breadcrumbs.
Dredge each filled cutlet first in the flour, shaking off any excess. Then dip it into the beaten eggs, ensuring it's fully coated. Finally, press it firmly into the breadcrumbs, making sure the entire surface is covered.
Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully place the breaded Cordon Bleus into the skillet. Do not overcrowd the pan; cook in batches if necessary.
Fry for 4-6 minutes on each side, or until golden brown and cooked through. The internal temperature of the pork should reach 145°F (63°C). If the breading browns too quickly, reduce the heat slightly.
Remove the Cordon Bleus from the skillet and place them on a wire rack lined with paper towels to drain any excess oil. Serve immediately.
