Instructions
Prepare your campfire for cooking. You'll want a bed of hot coals, not active flames, for even cooking.
Tear off four large sheets of heavy-duty aluminum foil (about 18x18 inches each).
In a large bowl, combine the sliced smoked sausage, bell peppers, and onion. Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, dried oregano, salt, and black pepper. Toss everything together until well coated.
Divide the sausage and vegetable mixture evenly among the four foil sheets. Place the mixture in the center of each sheet.
Bring the long edges of each foil sheet together and fold them over several times to create a sealed packet. Then, fold up the shorter ends to seal completely, ensuring no steam can escape.
Carefully place the foil packets directly onto the hot coals. Cook for 15-20 minutes, flipping the packets halfway through, until the vegetables are tender-crisp and the sausage is heated through. Cooking times may vary depending on the heat of your coals.
Using tongs or heat-resistant gloves, carefully remove the packets from the coals. Let them cool for a minute or two before carefully opening them to release the steam. Serve directly from the packets.
