- 2 cupsfresh basil leaves(packed)
- 2 clovesgarlic
- 1 cupParmigiano-Reggiano cheese(grated)
- 0.5 cupPecorino Sardo cheese(grated)
- 0.5 cuppine nuts
- 0.75 cupextra virgin olive oil
- 1 teaspoonsea salt
- 0.25 teaspoonfreshly ground black pepper
Instructions
Wash the basil leaves thoroughly and pat them dry with paper towels. Ensure they are completely dry to prevent the pesto from turning brown.
Peel the garlic cloves. If you prefer a milder garlic flavor, you can remove the green germ from the center of the cloves.
Lightly toast the pine nuts in a dry pan over medium heat for 2-3 minutes until fragrant and golden. Be careful not to burn them.
In a food processor, combine the basil leaves, garlic, toasted pine nuts, grated Parmigiano-Reggiano, and grated Pecorino Sardo. Pulse several times until the ingredients are finely chopped.
With the food processor running on low, slowly drizzle in the extra virgin olive oil until the pesto reaches a smooth, creamy consistency. You might not need all the oil, or you might need a little more, depending on your desired thickness.
Add the sea salt and freshly ground black pepper. Pulse a few more times to combine. Taste and adjust seasoning as needed.
Serve immediately with your favorite pasta, spread on bruschetta, or use as a flavorful addition to salads and sandwiches. Enjoy your homemade authentic Genoese pesto!
