- 100 gfresh wild garlic
- 50 galmonds(whole, blanched)
- 60 mlolive oil(extra virgin)
- 30 gParmesan cheese(freshly grated)Milch
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
Instructions
First, preheat your oven to 350°F (175°C). Spread the blanched almonds on a baking sheet and toast them in the preheated oven for about 5-7 minutes until lightly golden and fragrant. Be careful not to burn them. Let them cool completely.
Wash the wild garlic thoroughly and pat it dry. Roughly chop the wild garlic leaves.
Place the cooled, toasted almonds, chopped wild garlic, and grated Parmesan cheese into a food processor. Pulse a few times until the ingredients are roughly chopped and combined.
With the food processor running, slowly drizzle in the olive oil until a smooth, yet slightly coarse, pesto forms. You might need to scrape down the sides of the bowl occasionally.
Season the pesto with salt and freshly ground black pepper to taste. Mix briefly to combine the seasonings.
Transfer the wild garlic pesto to a clean jar. Pour a thin layer of olive oil on top to keep it fresh longer. Store in the refrigerator.
