- 250 gunsalted butter(softened)Milch
- 50 gfresh wild garlic leaves
- 1 Teelöffellemon zest(from 1 organic lemon)
- 1 Esslöffellemon juice
- 1 Prise(n)salt(to taste)
- 1 Prise(n)black pepper(freshly ground, to taste)
Instructions
Wash the wild garlic leaves thoroughly and pat them dry with a kitchen towel. Coarsely chop the leaves.
In a food processor or with a hand blender, finely chop the wild garlic leaves. Add the softened butter, lemon zest, and lemon juice. Blend until everything is well combined and the butter has a uniform green color.
Season the wild garlic butter with salt and freshly ground black pepper to taste. Mix well again.
Spoon the finished wild garlic butter onto a piece of parchment paper or plastic wrap. Roll it into a log shape. Twist the ends of the paper or wrap to seal.
Refrigerate the wild garlic butter for at least 1 hour, or until firm. Once firm, you can easily slice it for serving.
